Traditional Moroccan cuisine in Essaouira
Absolu Beldi offers its guests a dream stay a few kilometres from Essaouira in a framework full of intimacy, without opposite building, sprinkled with sweetness for more pleasure in the company of our team renowned for its legendary enthusiasm.
Latifa, our cook is not from the great schools of cooking, however, she has learned to cook in the best school of life, at home with her mother and the women of the family. Every morning, she does her shopping in Essaouira depending on the number of meals she has to prepare.
This is why it is imperative to reserve in the morning your evening meal. If you wish to have dinner on the evening of your arrival, you just have to send us an email the day before.
We offer you a selection of classic Moroccan dishes revisited by our chef that we realize with the products of our orchard and our vegetable garden to make your taste buds travel. You will taste dishes with seasonal products, preferably organic with exceptional flavours.
The breakfast
To start the day well, Rachid, the Manager of the Absolu Beldi guest house, prepares for you with Latifa the cook, a copious breakfast: Moroccan pancakes baghrir or Melaoui, M’semmen, all hot and tasty, home-made jam: figs apricots, strawberries, watermelon cherries … honey, butter, fruit, freshly squeezed orange juice, coffee, tea or chocolate at will.
The Dinner
Our table d’hôtes offers a farandole of Moroccan dishes rich in flavours which will be served to you on-site during your stay. The menus vary every day and are inspired by the season’s products. Our cheffe Latifa concocts appetizing garden vegetable starters Tajines of all kinds, couscous, Tanjia, and fresh fish directly from the port of Essaouira.
